1. Grate carrots or put through grinder or mince in blender. Place in deep saucepan.
2. Add milk and cinnamon. Boil slowly, stirring almost constantly until milk is evaporated. (The more stirring the better).
3. Add butter, vanilla, cardamom, sugar. Cook 5-10 minutes.
4. When mixture is thick and dry, spread on buttered plate to cool, cut in pieces. Or serve warm in dessert dishes with cream.
